There is an Ubercart Installation Profile available on Drupal.org
The 6.x-1.0-alpha8 was last updated as of this post in October of 2010.
Since then, Drupal 6 Core has been updated along with some important security updates as well.
If you are looking for an e-commerce package for Drupal 6, and haven't tried out Ubercart, this is what some would say is THE module package to use for an online store.
If you are using Drupal 7, check out the Drupal Commerce.
It can be somewhat tedious though to install and configure all of the modules just to get to the point of being able to actually create and add products to your store.
I found the UberDrupal installation profile a while back and decided to update the contributed modules and core for a recent site.
The updated UberDrupal-6.20 is available for download from github. Hopefully the updates will make it into the next release.
It will also be available as a Webenabled.com instant install application soon.
